Quick, Cheap & Simple





Hubby called to ask, "What r u cooking tonite ah?" I answered, "Love Menu".... he walked into the kitchen, he found these two dishes...ahhahahhahahah.... he exclaimed,"Ah???!!! wong kua chau har and fried tau foo with sauce??!! Love menu??!!" hahahhahaha

Yes, everyone out there, when every dish is cooked with love, sweat and tiredness... is called Love Menu...hehehehh
The sauce for the tau fu: Vinegar Red Chilli Ginger Garlic Thai Chili sauce sugar a pinch of salt The method: Chop all ginger, garlic and red chili. Saute them and add in Thai Cilli sauce, vinegar, sugar and salt. Bring to boil, that's it!! Pour over fried tau foo...

The gravy for Prawn and cucumber: Oyster sauce, light soya sauce and a little sugar. The method: Saute chopped garlic, add in prawns. Stir fry till cooked. Add in the cucumber, chau just a little, add in all the sauce. Dish out as quickly as possible so that cucumber is not overcooked... hubby likes it crispy!

The Combi Fish




Why do I name it The Combi Fish? Because it's a combination of tau cheong and keong yoong. Here's how i did it...
Ingredients: fish 1 tblspoon tau cheong 1 inch ginger 5 pips garlic chili padi For garnishing: spring onion red chilli

The Method: Blend tau cheong, ginger and garlic with a teaspoon of water. Fry the fish and set aside. Saute garlic, ginger strips and chilli padi till fragrant. Add in blended stuffs, cook till very fragrant and pour over fried fish...garnish it.... emmm....hubby said as he enters the house, "wa!!! smell soooooo heong!"

Lo Bak, I Did It My Way!!!!!!!!!!!!!




hahaha!! never knew I could do this, and it's amazing!!!!!

Ingredients:
Fu chuk
Pork/Chic meat
1/2 inch carrot
onions
red chilli
spring onions

Marinate:
five spice powder
pepper
soy sauce
a little dark soy sauce
sesame oil
sugar

The Method:
Finely chopped pork/chic and the rest of the ingredients. Mix them together, marinade with marinate ingredients. Wrap in fu chuk. Deep fry!!!

the secret:
fu chuk should not be washed, but just clean with a damp cloth. Otherwise the crunch is lost after fried. Chop the meat and not blend so that it has a better texture. Of all the marinate ingredients, put more five spice powder.

The Cin Cai Dish




























This is The Cin Cai Dish...that's what my colleague calls it... she was the one who inspired me with this dish... try it u wont regret...

Ingredients:

Chicken
Capsicum
Onions
Garlic

The Gravy:
Soy Sauce, kicap manis, dark soy sauce, sugar, oyster sauce, corn starch

The Marinade:
Sesame oil
soy sauce
sugar salt
dark soy sauce

The Method:
Marinate the chicken with marinade sauce. Saute onions, garlic, capsicum till fragrant. Add in the chicken, then close lid for 3 mins. Lastly, add in the gravy ingredients.... serve HOT!!!!

Claypot Chicken Rice!



Wow! it's been quite sometime, i think almost 2 months... i've started being a ratrace mom again... work, clean, cook, teach... what a mother!

To all my followers out there, here's Claypot Chicken Rice!!

Ingredients:

Chicken meat
Chicken stock
Rice
Ginger
Spring onion
Salted fish

To marinate:
oyster sauce
dark soy sauce
light soy sauce
sugar
sesame oil (very important)
pepper
salt
xiu hing wine (chinese cooking wine)

Method:
Marinade chicken meat for about 30 minutes. Heat up claypot, pour 1/2 cooked rice with chicken stock. Cook for 15 minutes or when u see the rice is almost done. Add in marinated chic and close the lid, let it simmer for about 20 minutes.

When done, add in salted fish and garnish with spring onions...emmmmm Yummy!!!!!!!!!

Special Chic with Special Sauce




To me, having the privileged to sit on the same table together with your loved ones, is the most blessed thing in life. Giving thanks for the food laid on the table meaning being grateful to our Great God for his abundant blessings...

So today, when I was going thru a recipe book, I found this recipe but it says it's for grilled fish, but I decided to change it to something with gravy.

Ingredients:

For gravy:
5 shallots
4 pips garlic
1/2 inch turmeric
1 tbsp chilli boh
1 red chilli

For sauce:
1/2 pack very thick santan
1 tbsp sugar
salt

The method:
Pan fry chicken coated with cornflour. Blend the gravy ingredients. Heat oil in wok and saute blended gravy ingredients till pecah minyak. Then pour in sauce ingredients, simmer till you can see santan is separated from oil. Meaning there's a layer of oil on top. Now, add in chicken. Simmer for a while...emmm...emmm....yum! yum!

Easy Peasy Dinner - Black Pepper Lamb Chop



this is such an easy to make dinner dish... Time was not on my side today, as son's Macaroni Cheese was burnt due to my carelessness... so I bertungkus lumus cook the Maca Cheese again... phew! Thank God son ate some biscuits and he was not too hungry...

so what could i do at that point of time, i took out the lamb and defrost it. Then pour wine on it and let it soak for 1/2 hr. Here's the ingredients.

Ingredients:
Lamb Shoulder
1 Onion

To marinate:
Black pepper sauce
Black pepper powder
a little oil
sugar
salt
a dash of light soy sauce
a dash of dark soy sauce

Method:
Marinade lamb with all the marinate items, leave aside for 1 hr, if marinade overnight, it would taste best. Then heat up some oil and butter and fry lamb. When lamb is almost cooked, put lamb into the oven. This is the time where you saute the onions, red pepper, yellow pepper, green pepper and then pour the marinated sauce into it... and it's done!!!!

Easy right?!!!!
